The culatello di zibello PDO is obtained from the anatomical part of the bundle of rear and internal crural muscles of the thigh of the pig. Afterwards the product is trimmed, until the classic pear shape is obtained. Culatello is flavoured with salt, pepper, garlic and/or dry white wine.
